Apricot Rosemary Gin Fizz

Description

A classic gin fizz with the addition of some Summery flavors of sweet apricot and woodsy aromatic rosemary. It’s like walking in an apricot farm surrounded by pine trees!


Ingredients

Apricot Rosemary Gin Fizz

  • 2 oz gin, 4 tbsp
  • 1 oz lemon juice, 2 tbsp
  • 3/4 oz apricot rosemary simple syrup*, 1.5 tbsp, see below
  • 1 egg white**, optional
  • 1 oz club soda, or ginger beer

Apricot Rosemary Simple Syrup

  • 8 apricots, pitted and cut into smaller pieces
  • 1/4 cup fresh rosemary, roughly chopped
  • 1 cup sugar, 200g
  • 1 cup water, 250ml
  • 1 tbsp fresh ginger, optional

Instructions

Apricot Rosemary Simple Syrup (makes 1 cup)

  1. Discard pits from apricots and cut the apricots into smaller pieces, 8 ish. No need to peel them. Roughly chop rosemary.
  2. Add sugar and water to a medium saucepan, give it a stir. Add in the rest of the ingredients and let it simmer for 15-20 minutes, stir occasionally and press the apricots into the syrup.
  3. Once done, remove from heat and strain the mixture, pressing the apricots gently into the sieve.
  4. Let the syrup cool to room temperature. Once cool, add into clean glass bottles and store in the fridge for 1 month.

Apricot Rosemary Gin Fizz

  1. Add all ingredients to a shaker and shake vigorously for 15 seconds. Add ice and shake a little more.
  2. Run a rosemary sprig around the edges of a whiskey or Tom Collins glass. Strain the drink into the glass.

Notes

* I love this apricot rosemary simple syrup and I tend to use more than the standard 3/4 oz.



** If you double or triple the recipe, don’t use more than 1 egg white. It is enough for two-three cocktails.
