Description
Fennel Grapefruit Salad is a fresh and healthy side dish with bright and slightly bitter citrusy flavors paired with a mild anise flavor.

Grapefruit Salad
- 6 cups chopped spinach (200g)
- 2-3 tbsp fresh mint
- 1 grapefruit (or orange*)
- 1 fennel (thinly sliced)
- 1/2 pomegranate (arils)
- 1/2 cup crumbled feta (75g)
- 3 tbsp chopped walnuts
Pomegranate Vinaigrette
- 1 tbsp balsamic glaze (or balsamic vinegar to make it thinner)
- 2 tbsp pomegranate juice**
- 1 tbsp grapefruit juice*
- 1/4 tsp garlic powder
- 1/2 tsp each of salt and pepper (or to taste)
Instructions
- In a large serving bowl, add the chopped spinach and mint.
- Cut the bottom of the grapefruit to make it sturdier, and run the knife along the edge to peel the grapefruit. Try to get as much of the bitter, white rind off. You can also take each individual wedge out of its skin.
- Sprinkle the grapefruit over the bed of spinach. Add thinly sliced fennel, pomegranate arils and feta cheese.
- In a dry pan, add the chopped walnuts and roast until fragrant, a few minutes. Then add to the salad.
- To make the vinaigrette, add all the ingredients in a jar with a lid and shake well to combine. Pour as much as desired on top of the salad.
Notes
* If you find grapefruit to be too bitter, you can use any citrus you like, such as orange or clementine. In the vinaigrette you can also use lemon juice instead of grapefruit juice.
** To make pomegranate juice, it is easier to use a juicer but you can also blend the arils and then run the mixture through a sieve. Store bought is also fine.
