Healthy Honey Banana Bread with Cinnamon Swirl

Description

Healthy banana bread only sweetened with honey and bananas, inside there's a luscious honey cinnamon swirl, making it the ultimate brunch without the guilt.


Ingredients

Units Scale

  • 1 cup all purpose flour, 125g
  • 1 cup whole wheat flour, 120g
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg, optional
  • 1/4 tsp salt
  • 2 large ripe bananas, mashed (+ 1 sliced lengtwise for decoration, optional)
  • 2 eggs
  • 1/2 cup honey, 170g
  • 4 tbsp greek yoghurt
  • 4 tbsp milk, of your choice
  • 1 tsp vanilla extract, optional

Cinnamon Swirl

  • 3 tbsp honey
  • 1 tsp cinnamon

Instructions

  1. Preparations: Pre-heat oven to 350F (175C). Lightly grease a 9x5 in (27x10cm) loaf tin with cooking spray or oil. You can also use parchment paper if you want to.
  2. Mix the dry ingredients together: flours, baking powder, cinnamon, nutmeg and salt, in a medium bowl.
  3. Mix wet ingredients: Mash the bananas. In a large bowl, mix eggs and honey together, then add in bananas, greek yoghurt, milk and vanilla. Mix until combined.
  4. Mix dry into wet: Working in batches, fold in the dry ingredients into the wet ingredients, until just incorporated. Try not to overmix!
  5. Make cinnamon swirl: Mix honey and cinnamon into a thin paste.
  6. Pour into the loaf pan: Start by adding 1/3 of the banana bread batter into the pan. Drizzle half of the cinnamon paste over, before pouring over another 1/3 of the batter. Now swirl the rest of the cinnamon paste over, before the last 1/3 of the batter.
  7. Optional: Slice a banana lengthwise and top the batter with it, lightly pressing down. I like the extra texture and banana flavor this gives, it's not just a decoration!
  8. Bake: On the middle rack for 1 hour. Optional: brush with butter on top for that sweet and salty combination.
  9. Cool: Cool 5-10 minutes before transferring to a wire rack to cool 'completely' (this just means cool enough to slice because slightly warm banana bread is the BEST!)
  10. Serve: Slice into 12-ish slices. Best with some butter on, but delicious either way!
