Hot Honey Brie is one of those recipes that feels a little bit fancy, but secretly couldn't be easier. A soft wheel of brie baked until gooey, topped with warm chili-infused honey, rosemary, and a sprinkle of sea salt - it's simple, comforting, and always a crowd-pleaser.

This recipe uses just a handful of ingredients, but each one matters.

 

  • Brie: A small wheel of brie melts beautifully without becoming oily. Its mild, buttery flavor is the perfect base for bold toppings. Once baked, it turns irresistibly gooey for about 15 minutes - so timing matters!
  • Honey: Honey provides sweetness and viscosity, clinging to the cheese instead of running off. Warming it gently intensifies the flavor and helps it absorb the spices.
  • Chili flakes: These add gentle heat rather than sharp spice. The warmth balances the richness of the cheese and sweetness of the honey.
  • Fresh rosemary: Rosemary brings a piney, aromatic note that cuts through the fat and ties everything together. A little goes a long way.
  • Sea salt: Just a light sprinkle sharpens all the flavors and keeps the dish from tasting flat or overly sweet.

Instructions

 

Preheat your oven to 375°F (190°C).

 

Place the brie wheel on a small oven-safe dish or baking tray lined with parchment. Bake until the center is soft and gooey - this usually takes around 17-20 minutes, depending on the size and thickness of the cheese.

 

While the brie is baking, prepare the hot honey. Warm the honey gently in a small saucepan until just below a simmer. Add chili flakes and rosemary, then keep it on very low heat for about 10 minutes to infuse. Remove from heat.

You can strain the honey or leave the chili and rosemary in. Leaving it unstrained gives a more rustic look and stronger flavor, which works especially well here.

 

Once the brie is out of the oven, spoon the hot honey generously over the top. Sprinkle lightly with sea salt and, if you like, a few extra rosemary needles.

 

Serve immediately as it firms up in just about 15 minutes. Cut it open when ready to serve, to gain access to the ooey gooey goodness. Make sure you have all the other things you are serving it with ready!

Substitutions

 

  1. The cheese: You can use Camembert instead of brie and it won't make a huge difference. It will be slightly earthier.
  2. The herb: Thyme is a great alternative to rosemary if you don't like rosemary. The herbs can also be omitted if you want.
  3. The spice: Feel free to use fresh chili instead of dried chili flakes. 
  4. The honey: I wouldn't really switch this with anything, but in a pinch you can use maple syrup.

 

Variations

 

This recipe is easy to customize depending on the occasion:

  • Extra deluxe: Add toasted walnuts or pecans on top. There's always room for more topping!
  • Sweeter version: Add a few thin slices of fresh fig or pear.
  • Spicier: Increase chili flakes or add a pinch of cayenne. 
  • Kid-friendly: Reduce or omit chili and focus only on the honey + rosemary.
  • Holiday-style: Add a tiny pinch of orange zest to the honey. Mm, so good!

Equipment

 

You don't need much, but a few choices matter:

  • Oven-safe dish or small skillet: Helps retain heat once out of the oven
  • Small saucepan: For gently warming and infusing the honey
  • Parchment paper: Makes cleanup easier if the brie leaks

If using a thick ceramic dish, the cheese may stay gooey slightly longer due to retained heat. On a metal tray, it will cool faster, however, serve immediately either way.

 

Storage

 

The brie should be served right away, however, the honey can be made in advance. Up to a week, I would say, although honey practically lasts a lifetime. Store it covered in the fridge so it doesn't absorb refrigerator smells. 

 

The honey will thicken once it cools, but pop it in the microwave for 10-20 seconds helps thin it out, perfect for pouring over the brie.

 

If you have leftover brie, you can reheat this. A whole wheel of brie needs roughly 2 minutes in the microwave, so adjust accordingly. You can also pop it in the oven at 300 ℉ (150 ℃).

Expert tips

 

A few simple steps can have a big payoff. 

 

  • Use a small brie wheel for best melting. I'd rather heat up several brie wheels than one large one. About 2-3 wheels are suitable for the amount of hot honey.
  • Don't rush the honey - gentle heat gives better flavor without ruining the honey. 
  • Seasoning lightly with salt at the end makes a huge difference. 
  • Serve immediately for peak gooeyness. Therefore, make sure you have all the things you are serving with the brie ready to go. 
  • Pair with sturdy bread or crackers to avoid breakage. Trust me, I have tried.

How long does baked brie stay gooey?

About 10-15 minutes, depending on the dish and room temperature. However, it is reheatable, see under Storage.

Can I bake multiple bries at once?

Yes, just make sure they have space and rotate the tray if needed.

Is hot honey very spicy?

No - just gently warm with a pleasant kick. However you can adjust chili to taste. I often increase it a little bit up to ¾ teaspoon, in addition I use a quite spicy chili flake from an Asian grocery store.

Should I remove the rind?

No, the rind helps the brie hold its shape while baking. But cut it open when ready to serve, to gain access to the gooey gooey goodness.
