Description
French fries is the ultimate comfort food, and with rosemary it just feels a little bit more elevated and of course, it tastes amazing.

Rosemary Fries
- 3 medium potatoes*, cut into matchsticks
- 3/4 tsp coarse salt
- 1 tbsp dried rosemary
- 1 tbsp olive oil
- 1 tsp chili flakes (optional)
Garlic Cream Cheese Dip
- 60g cream cheese (2 oz)
- 1 tbsp milk
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
- 1 tsp olive oil
- 30g melty cheese of choice, e.g. cheddar, gouda, Jarlsberg (1 oz)
Instructions
- Pre-heat the oven to 225C (435F).
- Peel your potatoes (if desired) and chop them as equal as possible, to ensure even baking. Place them in a bowl of cold water and soak for 30 minutes. This will help get rid of the excess starch and will leave your fries even crispier.
- In a pestle and mortar, grind coarse salt and dried rosemary together. Take the potato sticks out of the water, rinse them and dry them with a paper towel. The more dry, the more crisp you get! Place dry potato sticks into a bowl and pour in olive oil, and half of the rosemary salt.
- Line a baking tray with parchment paper and lay your potato sticks out on it. Be sure to avoid placing sticks too close together, you want them to have free space all around. Bake for about 30 minutes, turning them halfway through.
- Meanwhile, make the garlic cream cheese dip. Melt the cream cheese in the microwave for around 30 seconds. Whisk in the garlic, milk, pepper, salt and olive oil until a smooth consistency. When it is smooth, add in the other cheese. Microwave for another 30 seconds and whisk until smooth. Set in the refrigerator until the rosemary fries are ready.
- The rosemary fries are done and sprinkle them with more rosemary salt and chili flakes!

* Best potatoes to use are Yukon Gold, Asterix, Idaho, Maris Piper, Russet Burbank
